This restaurant only uses Hitachi-Akisoba buckwheat that is cultivated on contract basis by the three farmers in Ibaraki. The restaurant also keeps the traditional ways of grinding the buckwheat nut lets with a stone mill to make soba flour, and of hand-kneading the flour into dough.
The specialty is Ganso-Tsuke-Kamo-Kenchinsoba that is a cold soba noodle dish served with soy sauce based broth made using duck meat and vegetables. Why don’t you try some?
